We are located in historic downtown New Braunfels in the basement of the old, 1929 city hall building. The restaurant is handicap-accessible via an elevator from street level.

Seating

Our main dining room, private rooms and patio seat 123, our bar accommodates 26. Reservations are recommended.

Cuisine

Liberty Bistro serves Contemporary American Cuisine. Ours is a seasonally changing menu focusing on wild seafood, local meats and produce from small farms. Everything is made in-house including all of our bread, pastas, and desserts. We emphasise quality over quantity.

Design

Each space in Liberty Bistro has its own identity. For the Bar, the Treasury, the Senate and House, the Executive Branch and the Supreme Court you will find bold color, historic black and white photography and authentic flags from the nation's past.

Our Treasury Room is a vault from 1929 which holds our wine cellar and historic American documents and is available for private dining parties of 10 or less by reservation only.

Our Senate and House are semi-private rooms, chandeliered and table-clothed for parties of 6 or less.

Our Executive Branch is a fully private room designed for meetings, parties and wine dinners of up to 28 people.

Our patio is at street level bursting with color and life and can accommodate parties up to 24 people.

Interior and lighting design is by Architect Ron Bechtol of Lance, Larcade and Bechtol. The main dining room features a unique contemporary lighting design inspired by the United States Flag.

The kitchen is a ‘green’ by design and features a wood-burning pizza oven as well as induction burners reducing the restaurants energy footprint.
