Darren Scroggins - Founder/General Partner

I am born and raised in San Antonio Texas. I spent time in and around New Braunfels all my life. I have had the pleasure to work with world re-nowned chefs such as Franz Hendricks and Perri Luigi Ceribelli. I have enjoyed helping fine organizations such as Mama's, Carrabba's, Bistro Time, Boudro's and Myron's Prime Steakhouse establish and maintain success.

My inspiration for this concept comes from my love of food, wine and people as well as my fascination of the foundation and history of this great nation, the beauty of black and white photography and the power of faith.

I plan to develop this concept in many more communities. I also plan to launch and develop concepts of other jeaneries to pleasure those who come to visit, those who come to work and inspire those who come to explore.

Czar De Leon - Chef

Twenty-nine year old Chef Czar De Leon (Executive Chef of the Liberty Bistro) grew up cooking beside his mother from a very young age and went on to run the kitchen at their family restaurant at the age of 19.

Chef Czar graduated Cum Lade from The Texas Culinary Academy Le Cordon Bleu Austin in 2005. Before attending the academy Czar was a professional bull rider, which explains his fearless approach toward food.

Just as strong as his passion for food, so is his passion for giving back to others and to the community through charity events and donations.

After leaving The Texas Culinary academy Chef Czar worked at such places as The Westin La Cantera Resort Hotel in San Antonio Texas under Executive Chef John Northcutt, The River House Tea Room in Gruene Texas under Certified Executive Chef Carol Hill as her Sous chef, also as the Chef De Cuisine at the Liberty Bistro before taking over as Executive Chef in December of 2007.

Working with Executive Chef Czar Deleon is Sous Chef Ian Kroesche of Boyertown, Pennsylvania whose culinary education was obtained in Las Vegas, Nevada working in some of the finest restaurants in the country including the Bellagio and Wynn resort hotels.

This virtually unknown team of extremely passionate chefs will enlighten your view on food and amaze your pallet. So expect wonderful things to come!
